About this recipe

This light dessert cup layers Greek yogurt, raspberry purée, and crushed plain crisp cookies. The yogurt forms a thick, creamy base, the raspberry purée adds a fresh, lightly tart flavor, and the cookies provide a pleasantly crisp layer. Honey gently sweetens the dessert, while vanilla mellows the fruit's acidity. Assemble the layers as soon as the purée is ready, then chill briefly so the yogurt thickens and the flavors meld.

Ingredients

Servings: 2

  • 200 g Greek yogurt

  • 120 g raspberries

  • 2 tablespoons crushed plain crisp cookies

  • 1 teaspoon honey

  • a pinch of vanilla

Steps

  1. Mash the raspberries with the honey into a purée. If the seeds bother you, press the purée through a sieve.

  2. Stir the Greek yogurt with the vanilla.

  3. Break the plain crisp cookies into coarse pieces so they remain noticeable in the dessert cup.

  4. Layer the yogurt, raspberry purée, and plain crisp cookies.

  5. Refrigerate the dessert for 20–30 minutes before serving so the yogurt thickens and the raspberry purée lightly soaks into the plain crisp cookies.
