About this recipe
This vanilla custard is made with milk, egg yolks, and potato starch, with tart cherries providing a fruity contrast. Vanilla gives the base a delicate aroma, while the cherries add tartness, color, and a more pronounced flavor. Cook the custard slowly, stirring constantly, so it thickens evenly without lumps. Add the cherries after cooking the custard, or warm them separately briefly, so they retain their distinct fruit character.
Ingredients
Servings: 4
250 ml milk
2 egg yolks
1 tablespoon potato starch
120 g cherries
1/2 teaspoon vanilla extract or 1 teaspoon vanilla sugar
1 tablespoon sugar
Steps
Pour off about 80 ml of the cold milk and mix it with the egg yolks, sugar, vanilla, and potato starch.
Heat the remaining milk, approximately 170 ml, for 2–3 minutes, then pour in the starch mixture, stirring constantly.
Cook for 1–2 minutes, until the custard thickens, then transfer it to dessert cups.
Warm the cherries separately for 1–2 minutes or add them fresh on top.
Serve once cooled slightly.
