Bean, egg, and potato salad is a filling main-dish salad with boiled potatoes, eggs, beans, cucumber, and lettuce. Ingredients
Servings: 2
1/2 can beans
2 eggs
350 g potatoes
1 cucumber
a handful of lettuce
3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Steps
Boil the potatoes for 18–22 minutes until tender, drain, and let stand for 10 minutes, then cut into large pieces.
Hard-boil the eggs for 9 minutes from the time the water comes to a boil, cool, peel, and cut into quarters.
Drain and rinse the beans, cut the cucumber into half-moons, and dry the lettuce.
Mix the olive oil with the lemon juice, mustard, salt, and pepper. Gently toss the dressing with the potatoes, beans, cucumber, and lettuce.
Arrange the eggs on top and serve.
