Turkey and bulgur salad is a hearty main-dish salad with turkey breast, bulgur, tomato, cucumber, and arugula. Bulgur provides a filling base, turkey adds protein, and the fresh vegetables keep the dish light. Arugula adds a mildly peppery note that pairs well with the delicate meat and neutral grain. Serve this turkey salad right away or slightly cooled; it also works well as a packed lunch.

Ingredients

  • 250 g turkey breast

  • 100 g bulgur

  • 1 tomato

  • 1/2 cucumber

  • a handful of arugula

  • 3 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Preheat a conventional oven (no fan) to 200°C and position a rack in the middle. Cook the bulgur for the time indicated on the package, then set it aside for 5 minutes to cool slightly.

  2. Pat the turkey dry and rub it with 1 tablespoon of the olive oil, half the salt, and half the pepper. Bake for 18–22 minutes, until the turkey is cooked through. Let the meat rest for 5 minutes, then cut it into thin slices.

  3. Dice the tomato and cucumber.

  4. Whisk the remaining 2 tablespoons of olive oil with the lemon juice, mustard, and the remaining salt and pepper. Toss the dressing with the bulgur, arugula, tomato, and cucumber.

  5. Arrange the turkey slices over the salad and serve.
