Its creamy consistency comes from combining the egg mixture with the hot pasta and a little pasta water, not from adding cream. Prepare the ingredients in advance, because the sauce comes together in just a few moments after the pan is removed from the heat. Carbonara is best served immediately, generously sprinkled with freshly ground pepper and additional Parmesan.

  • 400 g spaghetti

  • 150 g smoked bacon, cut into small dice

  • 4 large eggs

  • 80 g finely grated Parmesan

  • 1 teaspoon freshly ground black pepper, plus more for serving

  • 1 tablespoon salt for the pasta water

  • 100 ml pasta cooking water

Steps

  1. In a bowl, thoroughly whisk the eggs, Parmesan, and half of the pepper until a thick, smooth mixture forms. Set it aside while the pasta cooks.

  2. Cook the bacon in a large skillet over medium heat for about 8 minutes, stirring occasionally, until the fat renders and the pieces are golden and slightly crisp. Remove the skillet from the heat.

  3. Bring at least 3 liters of water to a boil, add the salt, and cook the spaghetti according to the time on the package, usually 8–10 minutes, until al dente. Reserve 100 ml of the cooking water before draining.

  4. Drain the spaghetti without rinsing it and transfer it to the skillet with the bacon. Toss for about 1 minute so the pasta is thoroughly coated with the rendered fat.

  5. Pour the egg mixture into the skillet, which has been removed from the heat, and stir quickly for 1–2 minutes, gradually adding the cooking water. The heat from the pasta will set the eggs, and the sauce should become smooth, glossy, and creamy, without lumps.

  6. Divide the spaghetti carbonara among plates and serve immediately, sprinkled with the remaining pepper and a little additional Parmesan, if any remains in the bowl.
