Marinade and Chicken
800 g boneless, skinless chicken thighs
4 tablespoons soy sauce
2 tablespoons honey
1.5 tablespoons gochujang paste
2 tablespoons sesame oil
3 garlic cloves, finely chopped
1 tablespoon fresh ginger, finely grated
2 tablespoons lime juice
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
For Serving
2 tablespoons sesame seeds
3 scallions, thinly sliced
1 lime, cut into wedges
Steps
In a bowl, combine the soy sauce, honey, gochujang, sesame oil, garlic, ginger, lime juice, smoked paprika, salt, and pepper.
Add the chicken, coat it thoroughly in the marinade, cover, and refrigerate for 30 minutes, or ideally for 2 hours.
Preheat the grill to medium-high heat and lightly oil the grates. Remove the chicken from the marinade, letting the excess drip off.
Remove the chicken from the grill and let rest for 5 minutes before slicing.
