About this recipe
Penne with broccoli and cheddar is a creamy dinner with a short ingredient list and a pronounced cheese flavor. Broccoli adds freshness and color, cheddar creates a thick sauce, and milk and butter bring everything together without heavy cream. Cook the broccoli briefly so it softens without losing all its texture. Melt the cheddar over low heat for a smoother sauce that clings well to the penne. Serve immediately, before the cheese sauce thickens too much.
Ingredients
Servings: 4
250 g penne pasta
1 small head of broccoli
70 g cheddar cheese
120 ml milk
1 tablespoon butter
Steps
Cook the penne until al dente. Before draining, reserve a few tablespoons of the hot cooking water, as it will help thin the cheddar sauce.
Cut the broccoli into small florets. Melt the butter in a skillet, add the broccoli and 3 tablespoons of the reserved pasta water, cover, and cook for 5–6 minutes, until the florets soften but remain slightly firm.
Pour in the milk, add the grated cheddar and a little pasta water to make a thick, creamy sauce.
Add the penne to the cheese sauce with broccoli and stir over low heat until the cheddar evenly coats the pasta.
Serve immediately, while the cheddar sauce is still hot and creamy, because it thickens quickly as it cools.
