  • 250 g penne pasta

  • 1 small head of broccoli

  • 70 g cheddar cheese

  • 120 ml milk

  • 1 tablespoon butter

Steps

  1. Cook the penne until al dente. Before draining, reserve a few tablespoons of the hot cooking water, as it will help thin the cheddar sauce.

  2. Cut the broccoli into small florets. Melt the butter in a skillet, add the broccoli and 3 tablespoons of the reserved pasta water, cover, and cook for 5–6 minutes, until the florets soften but remain slightly firm.

  3. Pour in the milk, add the grated cheddar and a little pasta water to make a thick, creamy sauce.

  4. Add the penne to the cheese sauce with broccoli and stir over low heat until the cheddar evenly coats the pasta.

  5. Serve immediately, while the cheddar sauce is still hot and creamy, because it thickens quickly as it cools.
