About this recipe

This bean and cheese quesadilla is a warm snack made with flour tortillas, red beans, onion, cumin, and melted cheese. Lightly mashing the beans creates a hearty filling that stays neatly inside the tortillas. Onion adds sweetness, cumin provides a distinctive aroma, and melted cheese holds the filling together. Cook the quesadilla until the tortillas are golden and the center is hot and soft. It works as a quick meatless quesadilla, a warm snack, or a simple skillet dinner.

Ingredients

Servings: 2

  • 2 flour tortillas

  • 1/2 can beans

  • 100 g cheese

  • 1 onion

  • 1 teaspoon cumin

  • 1 teaspoon canola oil (about 5 g)

Steps

  1. Heat the oil in a skillet. Finely chop the onion and sauté for 2–3 minutes.

  2. Drain the beans and lightly mash them with a fork, then combine with the onion and cumin.

  3. Sandwich the filling and cheese between the tortillas, then cook in a dry skillet for 3–4 minutes per side, until the center is heated through and the cheese has melted.

  4. Cut the quesadilla into triangles and serve warm.
