About this recipe
This chicken and bell pepper quesadilla is a filling snack made with flour tortillas, cheese, olive oil, and a skillet-cooked filling. Chicken makes it filling, bell pepper adds juiciness and mild sweetness, and the cheese binds the filling as it melts. Cut the chicken into small cubes so it cooks quickly and spreads evenly through the tortilla. Cook the quesadilla on both sides until the tortillas are golden and lightly crisp. It works well as a warm snack, a quick dinner, or a simple skillet lunch.
Ingredients
Servings: 2
2 flour tortillas
150 g chicken
1/2 bell pepper
100 g cheese
1 tablespoon olive oil
Steps
Cut the chicken into small cubes and the bell pepper into thin strips.
Sauté the chicken and bell pepper in the olive oil for 6–8 minutes, until the chicken is cooked through.
Arrange the chicken, bell pepper, and cheese on one tortilla, cover with the second tortilla, and cook on both sides until golden.
Let the quesadilla rest for a minute after removing it from the skillet, then cut it into pieces so the chicken and cheese filling does not spill out.
