About this recipe
Savory ham and cheese muffins are a substantial snack made from a simple batter of eggs, milk, flour, and oil, then baked in muffin cups. Ham adds a salty, meaty note, while cheese makes the centers heartier and more flavorful after baking. Baking powder creates a light texture without yeast or proofing, making these muffins quick to prepare. Pack them in a lunchbox, serve them for dinner, or offer them warm after a brief cooling time.
Ingredients
Servings: 6
2 eggs
150 g all-purpose flour
120 ml milk
80 g ham
70 g cheese
40 ml oil
1 teaspoon baking powder
Steps
Preheat a conventional oven (no fan) to 180°C, position a rack in the middle, and prepare a muffin pan with 6 wells.
Finely chop the ham and grate the cheese or chop it into small pieces.
In one bowl, mix the eggs, milk, and oil; in another, mix the flour and baking powder.
Add the dry ingredients to the wet ingredients and mix briefly, then gently fold in the ham and cheese.
Divide the batter among the 6 muffin cups and bake for 18–22 minutes, until the muffins have risen, are lightly browned, and a toothpick inserted into a cheese-free area comes out dry. Cool in the pan for 5 minutes.
