About this recipe

Savory ham and cheese muffins are a substantial snack made from a simple batter of eggs, milk, flour, and oil, then baked in muffin cups. Ham adds a salty, meaty note, while cheese makes the centers heartier and more flavorful after baking. Baking powder creates a light texture without yeast or proofing, making these muffins quick to prepare. Pack them in a lunchbox, serve them for dinner, or offer them warm after a brief cooling time.

Ingredients

Servings: 6

  • 2 eggs

  • 150 g all-purpose flour

  • 120 ml milk

  • 80 g ham

  • 70 g cheese

  • 40 ml oil

  • 1 teaspoon baking powder

Steps

  1. Preheat a conventional oven (no fan) to 180°C, position a rack in the middle, and prepare a muffin pan with 6 wells.

  2. Finely chop the ham and grate the cheese or chop it into small pieces.

  3. In one bowl, mix the eggs, milk, and oil; in another, mix the flour and baking powder.

  4. Add the dry ingredients to the wet ingredients and mix briefly, then gently fold in the ham and cheese.

  5. Divide the batter among the 6 muffin cups and bake for 18–22 minutes, until the muffins have risen, are lightly browned, and a toothpick inserted into a cheese-free area comes out dry. Cool in the pan for 5 minutes.
