2 eggs
150 g all-purpose flour
120 ml milk
100 g spinach
60 g feta cheese
40 ml oil
1 teaspoon baking powder
Steps
Preheat a conventional oven (no fan) to 180°C, position a rack in the middle, and prepare a muffin pan with 8 wells. Coarsely chop the spinach.
Place the spinach in a dry skillet and heat over medium heat for 2–3 minutes, until wilted. Let cool, squeeze out very thoroughly, and chop again.
Whisk the eggs with the milk and oil. In a separate bowl, combine the flour with the baking powder, then add the dry ingredients to the wet ingredients and mix briefly.
Gently fold in the squeezed spinach and crumbled feta, then divide the batter among the 8 muffin cups.
Bake for 18–22 minutes, until the muffins have risen, the tops spring back, and a toothpick inserted into a part without feta comes out dry. Cool in the pan for 5 minutes.
