  • 300 g cod

  • 1 carrot

  • 1 leek

  • 900 ml vegetable broth

  • 2 potatoes

Steps

  1. Cut the cod into larger pieces, slice the carrot, cut the leek into half-moons, and dice the potatoes. Set the fish aside until near the end of cooking.

  2. Place the leek, carrot, and potatoes in a pot. Pour in 900 ml vegetable broth and cook for 12–18 minutes, until the vegetables are tender.

  3. Once the vegetables are tender, add the cod pieces to the hot soup and cook for 5–7 minutes, just until the fish is opaque but still tender.

  4. Serve the soup immediately, while the cod is cooked but still juicy.
