  • 1 head broccoli

  • 1 potato

  • 850 ml vegetable broth

  • 50 g cheddar cheese

  • 1 onion

Steps

  1. Cut the broccoli into florets, finely chop the stem, peel and dice the potato, and chop the onion.

  2. Cook the onion for 4 minutes in about 50 ml of the 850 ml broth, until softened.

  3. Add the broccoli and potato, pour in the remaining broth, and cook for 15–20 minutes, until the vegetables are tender.

  4. Blend the broccoli, potato, and onion until smooth and creamy.

  5. Add the grated or finely chopped cheddar to the hot soup and stir until completely melted. Heat gently without bringing the soup to a vigorous boil so the cheese does not separate.
