  • 180 g green lentils

  • 1 carrot

  • 1 onion

  • 1 liter vegetable broth

  • 1 bay leaf

Steps

  1. Rinse the green lentils in a sieve, dice the carrot or cut it into half-moons, and finely chop the onion.

  2. Gently cook the onion with the bay leaf for 3–4 minutes in 3 tablespoons of the broth.

  3. Add the green lentils and carrot, pour in the remaining broth, and cook for 20–25 minutes, until the lentils are tender but still retain a little texture.

  4. Remove the bay leaf and let the soup stand for 5 minutes so it thickens naturally.
