About this recipe
Green lentil soup with vegetables is a filling soup made with vegetable broth, carrots, onion, and a bay leaf. Green lentils retain more structure than red lentils, giving the soup a distinctly hearty, home-style character. The carrot adds gentle sweetness, the onion builds flavor, and the bay leaf gives the broth a classic aroma. This simple meatless soup is substantial enough to serve as a complete lunch.
Ingredients
Servings: 6
180 g green lentils
1 carrot
1 onion
1 liter vegetable broth
1 bay leaf
Steps
Rinse the green lentils in a sieve, dice the carrot or cut it into half-moons, and finely chop the onion.
Gently cook the onion with the bay leaf for 3–4 minutes in 3 tablespoons of the broth.
Add the green lentils and carrot, pour in the remaining broth, and cook for 20–25 minutes, until the lentils are tender but still retain a little texture.
Remove the bay leaf and let the soup stand for 5 minutes so it thickens naturally.
