Onion soup with cheese toast is an aromatic vegetable-broth soup served with baguette and cheese. Butter draws out the onions’ sweetness and deeper flavor, while slow cooking intensifies the base. 4 onions
900 ml vegetable broth
4 slices baguette
80 g cheese
1 tablespoon butter
Steps
Peel the onions and cut them into thin slices. Prepare four baguette slices and grate 80 g cheese.
Melt the butter in a pot, add the onions, and cook over low or medium heat for 25–30 minutes, stirring often, until tender and distinctly golden. Pour in the broth and cook for another 15–20 minutes.
While the soup cooks, preheat the oven to 220°C. Arrange the baguette slices on a baking sheet, divide all the cheese among them, and bake for 5–7 minutes, until the cheese melts and the bread edges brown.
Ladle the soup into four bowls and serve each portion with one hot cheese toast.
