About this recipe

Vegetable soup with green beans is a light broth-based soup with potatoes, carrots, celery root, and green beans. The potatoes make it more filling, while the carrots and celery root form a delicate base. The green beans retain some bite and bring a fresh vegetable note. It is a simple, mild everyday soup that feels light without tasting watery.

Ingredients

Servings: 4

  • 150 g green beans

  • 3 potatoes

  • 1 carrot

  • a piece of celery root

  • 1 liter vegetable broth

Steps

  1. Trim the green beans and cut them into shorter pieces. Cut the potatoes into cubes, the carrot into half-moons, and the celery root into small cubes.

  2. Add the potatoes, carrot, and celery root to the broth. Bring to a boil and cook for 12–15 minutes.

  3. Add the green beans and cook for another 6–8 minutes, until tender but still slightly firm.

  4. Remove the soup from the heat when the potatoes are tender, and serve immediately.
