Ingredients

Servings: 4

  • 70 g millet

  • 2 potatoes

  • 1 carrot

  • a piece of celery root

  • 1 liter vegetable broth

Steps

  1. Peel the potatoes and carrot and cut them into small cubes, then cut the celery root into small pieces. Rinse the millet in a sieve so it has a milder flavor after cooking.

  2. Add the millet to the boiling broth and cook for 10 minutes. Add the potatoes, carrot, and celery root, then cook for another 12–15 minutes, until the vegetables are tender but retain their shape.

  3. Remove the soup from the heat when the millet is tender and the potatoes and carrot still retain their shape; let stand for a few minutes, as the millet will thicken the broth slightly.
