Breakfast wraps with hummus and baked tofu are a filling plant-based alternative to tortillas made with vegetables alone. Hummus serves as both a creamy base and a sauce, baked tofu adds protein and a firmer texture, and spinach brings a fresh green note. Pat the tofu thoroughly dry before baking so it browns more quickly and does not release water into the wraps. Spread the hummus evenly, leaving a border for rolling. Serve immediately, preferably while the tofu is still slightly warm.

  • 2 flour tortillas

  • 4 tablespoons hummus

  • 120 g tofu

  • a handful of spinach

Steps

  1. Preheat a conventional oven (no fan) to 200°C. Pat the tofu dry, cut it into strips, arrange on a parchment-lined baking sheet, and bake for 15–20 minutes, turning halfway through, until the edges are lightly browned.

  2. Warm the tortillas in a dry skillet for 30–60 seconds so they are easy to roll.

  3. Spread each tortilla with hummus, add the spinach, and top with the warm tofu.

  4. Fold in the sides, then roll each wrap fairly tightly.

  5. Serve immediately or cut the wraps diagonally.
