Classic waffles are crisp on the outside while remaining tender and soft inside. This is a simple recipe for eight golden waffles made with a light batter of milk, eggs, and butter. Letting the batter rest briefly helps the flour absorb the liquid, so the waffles cook evenly and have a pleasant texture. Serve them right after cooking with powdered sugar, fresh fruit, or your favorite topping.

Batter

  • 250 g all-purpose flour

  • 8 g baking powder

  • 30 g superfine sugar

  • 1 pinch of salt

  • 2 medium eggs

  • 300 ml milk

  • 90 g butter, melted and cooled, divided into 75 g for the batter and 15 g for greasing the waffle iron

Steps

  1. Add the flour, baking powder, sugar, and salt to a large bowl, then whisk to distribute the ingredients evenly.

  2. In a second bowl, whisk the eggs with the milk and 75 g of the melted, cooled butter. The butter should be warm but not hot so it does not cook the eggs.

  3. Pour the wet ingredients into the dry ingredients and whisk briefly, just until combined. Small lumps are fine; overmixing may make the waffles less tender.

  4. Cover the bowl and let the batter rest at room temperature for 10 minutes so it thickens slightly and develops a more stable consistency.

  5. Turn on the waffle iron and preheat it according to the appliance instructions, usually to about 190–200°C. Before the first batch, carefully brush the plates with the remaining 15 g melted butter, using a heat-resistant pastry brush.

  6. Add the appropriate amount of batter for your waffle iron, close the lid, and cook each batch for about 4–5 minutes. The waffles are ready when they are evenly golden, crisp, cooked through in the center, and release easily from the plates. Transfer them to a wire rack rather than a plate so they do not soften from steam.
