About this recipe

Oatmeal with apricots and pumpkin seeds is a warm breakfast with fruity sweetness and a crunchy topping. Oats simmered in milk create a mild, creamy base, apricots add freshness, and cinnamon complements their flavor. Pumpkin seeds contrast with the soft oatmeal and give it a bolder character. Add the maple syrup at the end, especially if the apricots are less sweet. Serve immediately after cooking, preferably with some of the fruit and seeds on top.

Ingredients

Servings: 1

  • 80 g rolled oats

  • 250 ml milk

  • 3 apricots

  • a pinch of salt

  • 1 teaspoon butter

  • 1 tablespoon pumpkin seeds

  • 1/2 teaspoon cinnamon

  • 1 teaspoon maple syrup

Steps

  1. Cut the apricots into smaller pieces.

  2. Heat the milk with the salt and butter; when it begins to steam gently, add the rolled oats.

  3. Cook over low heat for 4–5 minutes, stirring regularly, until the oatmeal thickens.

  4. Add the apricots, cinnamon, and maple syrup. Cook for another 1–2 minutes, then sprinkle with the pumpkin seeds.

  5. Transfer the oatmeal to a bowl and serve while the apricots are just warmed through and the pumpkin seeds are still distinctly crunchy.
