Ingredients

Servings: 1

  • 80 g rolled oats

  • 250 ml milk

  • 100 g roasted pumpkin

  • a pinch of salt

  • 1 teaspoon butter

  • 1/2 teaspoon cinnamon

  • 1 tablespoon pumpkin seeds

  • 1 teaspoon honey

Steps

  1. Mash the roasted pumpkin with a fork into a coarse purée.

  2. Heat the milk with the salt and butter until the butter melts, then add the rolled oats and stir well.

  3. Cook for 4–5 minutes, until the oats are tender and form a thick base that will blend well with the roasted pumpkin purée.

  4. Add the pumpkin, cinnamon, and honey. Cook for another 1–2 minutes, then sprinkle with the pumpkin seeds.

  5. Transfer the oatmeal to a bowl while it is still creamy, and add the pumpkin seeds just before serving so they stay crunchy.
