About this recipe

Roasted pepper and ricotta make a mild, creamy spread with a touch of sweetness. The roasted pepper adds aroma and color, ricotta mellows the flavor, and a little olive oil helps the ingredients come together smoothly. Drain the pepper well before mixing so the spread does not become watery. Leave it slightly chunky or blend it for a silkier texture. Serve with bread, toast, arugula, or tomato, or use it as a sandwich filling.

Ingredients

Servings: 4

  • 1 roasted bell pepper

  • 120 g ricotta

  • 1 teaspoon olive oil

  • 4 slices bread

  • 1/4 teaspoon salt

  • a pinch of black pepper

Steps

  1. Drain the roasted bell pepper, remove the skin if it comes off easily, and finely dice the pepper.

  2. Mix the ricotta with the olive oil, then add the pepper.

  3. Mash some of the pepper with a fork to give the spread color, leaving a few distinct pieces.

  4. Season the spread with salt and black pepper, then serve it on bread.
