Crumbled tofu stands in for scrambled eggs, turmeric adds color, and broccoli provides a crisp vegetable bite. It is a simple, high-protein hot meal to serve with bread or a tortilla. Cut the broccoli into very small florets or chop it finely so it softens during the short cooking time. Drain the tofu before adding it to the skillet so the scramble does not turn watery. Add the sesame seeds near the end so they retain their aroma.
Ingredients

180 g plain tofu
120 g broccoli
1 teaspoon sesame seeds
1 teaspoon turmeric
2 slices bread or 1 tortilla
1 tablespoon canola oil (about 12 g)
1/4 teaspoon salt
a pinch of black pepper
Steps
Drain the tofu and crumble it with a fork. Finely chop the broccoli or separate it into very small florets.
Heat the oil in a skillet, add the finely chopped broccoli, and cook over medium heat for 4–5 minutes, stirring, until tender but still green.
Add the tofu and turmeric, season with salt and pepper, and cook for another 3–4 minutes. Sprinkle with the sesame seeds near the end.
Serve immediately with bread or a tortilla, while the broccoli is still green and slightly firm and the sesame seeds remain distinct against the warm tofu.
