The oats absorb plant-based milk to form a creamy base, while fresh strawberries, banana, and a spoonful of peanut butter add a sweet, refreshing flavor and make the no-cook breakfast filling. Prepare the jars in the evening, then add the fruit and eat them straight from the refrigerator in the morning. They are easy to take to work or a picnic and also make a light summer breakfast.
Ingredients

Overnight Oat Base
100 g rolled oats
250 ml oat milk or another plant-based milk
150 g plain plant-based yogurt
1 tablespoon chia seeds
1 tablespoon maple syrup or agave syrup
1/2 teaspoon vanilla extract
a pinch of salt
Toppings
200 g strawberries
1 medium banana
2 tablespoons peanut butter
1 tablespoon chopped nuts or almonds
Steps
In a bowl, stir together the oats, oat milk, plant-based yogurt, chia seeds, maple or agave syrup, vanilla, and a pinch of salt.
Wait 5 minutes, stir again, divide the mixture between 2 jars or bowls, cover, and refrigerate for at least 8 hours or overnight.
In the morning, slice the strawberries and banana. If the peanut butter is very thick, place the amount you need in a small bowl and warm it briefly in a warm-water bath.
Arrange the strawberries and banana over the chilled oats, then top each portion with peanut butter.
Sprinkle with nuts or almonds and serve chilled right away.
