  • 300 g sweet potato

  • 1 egg

  • 2 tablespoons yogurt

  • 2 tablespoons all-purpose flour

  • 1 tablespoon canola oil (about 12 g), for frying

Steps

  1. Peel the sweet potato and grate it on the large holes of a box grater.

  2. In a bowl, mix the grated sweet potato with the egg and flour until a cohesive mixture forms.

  3. Heat the measured 12 g of oil in a nonstick skillet. Add 1 level tablespoon of the mixture at a time and shape it into fritters no more than 1 cm thick. Fry in batches over medium heat for 3–4 minutes per side, until the sweet potato is tender and the fritters are browned and firm enough to flip.

  4. Serve the warm fritters with the yogurt on top or alongside.
