Banana muffins are soft muffins made with ripe bananas, eggs, all-purpose flour, oil, and cinnamon. Mix the ingredients briefly, just until combined, so the muffins bake up fluffy rather than dense.

Ingredients

  • 180 g all-purpose flour

  • 2 bananas

  • 2 eggs

  • 60 ml oil

  • 1 teaspoon cinnamon

  • 70 g sugar

  • 1 teaspoon baking powder

Steps

  1. Preheat a conventional oven (no fan) to 180°C and prepare 10 muffin cups with paper liners.

  2. In one bowl, combine the flour, sugar, baking powder, and cinnamon.

  3. In a second bowl, whisk the eggs with the oil. In a separate bowl, mash the bananas into a smooth purée.

  4. Pour the eggs and oil into the dry ingredients and mix briefly. Add the banana purée and fold with a spatula a few more times, just until no dry flour remains.

  5. Divide the batter among 10 paper liners and bake on the middle rack for 18–22 minutes, until a toothpick inserted into the center of a muffin comes out free of wet batter.

  6. After 5 minutes, remove the muffins from the pan and transfer them to a wire rack to cool completely.
