220 g all-purpose flour
2 eggs
150 ml cream
120 g cherries
70 g sugar
1 teaspoon baking powder
Steps
Line a baking pan with parchment paper and preheat the oven to 180°C.
Mix the eggs with the sugar and cream.
Add the flour and baking powder, then stir gently so the cream-based batter remains light.
Drain the cherries, then gently fold them into the batter or scatter them over the top.
Bake the cherry cream cake for 35–45 minutes, until the center is springy and a toothpick comes out clean.
Cool the cake completely before slicing because the cherries retain hot juice for a long time.
