About this recipe

This simple oven-baked cherry cake uses cream to give the batter a soft texture and delicate dairy flavor. Cherries balance the sweetness with gentle tartness, keeping the cake from tasting bland or heavy. Fold in the fruit carefully so it is evenly distributed and does not release too much juice before baking. Once cool, the cake slices neatly, with cherries providing a distinct fruit note in every piece.

Ingredients

Servings: 8

  • 220 g all-purpose flour

  • 2 eggs

  • 150 ml cream

  • 120 g cherries

  • 70 g sugar

  • 1 teaspoon baking powder

Steps

  1. Line a baking pan with parchment paper and preheat the oven to 180°C.

  2. Mix the eggs with the sugar and cream.

  3. Add the flour and baking powder, then stir gently so the cream-based batter remains light.

  4. Drain the cherries, then gently fold them into the batter or scatter them over the top.

  5. Bake the cherry cream cake for 35–45 minutes, until the center is springy and a toothpick comes out clean.

  6. Cool the cake completely before slicing because the cherries retain hot juice for a long time.
