About this recipe

These cocoa walnut balls are a good option when you want something sweet without making a large cake. They may suit a gluten-free diet if every ingredient comes from a reliably gluten-free source.

Ingredients

Servings: 20

  • 100 g walnuts

  • 100 g dates

  • 1 tablespoon cocoa powder

  • 1 teaspoon honey

  • 1 tablespoon gluten-free rolled oats

Steps

  1. Soak the dates in warm water for 5–10 minutes only if they are very dry; then drain and squeeze them thoroughly so the mixture does not become too loose.

  2. Blend the walnuts, dates, cocoa, honey, and gluten-free rolled oats into a thick, sticky mixture.

  3. Taste the mixture and, if needed, add 1 teaspoon of water or a tablespoon of oats to adjust the consistency.

  4. Scoop out portions the size of a small walnut and roll them between your palms, pressing the mixture so the cocoa, nuts, and oats bind well.

  5. Refrigerate the balls for 20–30 minutes; once chilled, they will be firmer and the cocoa and walnut flavors more pronounced.
