About this recipe
These coconut date balls are a sweet no-bake dessert in which dates bind shredded coconut, cocoa, honey, and gluten-free rolled oats into a firm mixture. Dates provide natural stickiness and deep sweetness, cocoa adds chocolate flavor, and coconut stands out in both flavor and texture. The oats help make the mixture thick so the balls hold their shape well. After chilling, the dessert becomes firmer and easier to serve.
Ingredients
Servings: 10
120 g dates
80 g shredded coconut
1 tablespoon cocoa powder
1 tablespoon honey
1 tablespoon gluten-free rolled oats
Steps
Soak the dates briefly in warm water if they are hard, then drain them very thoroughly because shredded coconut readily absorbs excess moisture.
Blend the dates, shredded coconut, cocoa, honey, and gluten-free rolled oats into a thick, sticky mixture.
Taste the mixture and, if needed, add 1 teaspoon of water or more shredded coconut to adjust the consistency.
Take small portions of the mixture and roll them firmly until the dates bind the coconut, cocoa, and oats into compact balls.
Refrigerate the balls for 20–30 minutes so the coconut mixture sets and holds its shape more easily.
