  • 6 gluten-free crêpes

  • 180 g mascarpone

  • 120 g raspberries

  • 1 teaspoon sugar

  • a pinch of vanilla

Steps

  1. Mix the mascarpone with the sugar and vanilla.

  2. Rinse the raspberries; you can lightly crush about half of them into a sauce.

  3. Warm the gluten-free crêpes for 30–60 seconds, spread with the cream, and add the raspberries.

  4. Fold the crêpes and serve promptly so the fruit does not release too much juice.
