Whip the cream only to soft peaks and fold it gently into the twaróg so the filling remains thick. After at least 2 hours of chilling, the dessert holds its layers better and tastes more cohesive.

300 g finely ground twaróg (Polish farmer’s cheese)
150 ml whipping cream (30% fat)
100 g mango
40 g plain crisp cookies
1 teaspoon sugar
Steps
Mix the twaróg with the sugar to make a creamy base before adding the whipping cream.
Whip the well-chilled cream to soft peaks, then fold it into the twaróg with a few strokes of a spatula so the mixture does not become too thin.
Cut the mango into a small dice or blend it into a thick purée.
Crush the plain crisp cookies and divide them among the cups as the bottom layer beneath the cheese filling.
Layer the plain crisp cookies, filling, and mango in the cups, then chill the dessert for at least 2 hours so the layers retain their shape better.
