About this recipe

These mini serniczki, individual Polish cheesecakes baked in ramekins, are made with finely ground twaróg, eggs, cream, and vanilla pudding powder. The ramekins make them easy to portion, serve, and store without slicing a large cake. The pudding powder helps the filling set while keeping it delicate, and the cream adds smoothness. Bake them gently at a moderate temperature so they stay even and soft without drying around the edges.

Ingredients

Servings: 8

  • 500 g finely ground twaróg (Polish farmer’s cheese)

  • 2 eggs

  • 100 g sugar

  • 80 ml cream

  • 40 g gluten-free vanilla pudding powder (cook-and-serve)

Steps

  1. Mix the twaróg with the sugar, eggs, and cream until smooth but not aerated.

  2. Add the vanilla pudding powder and briefly fold it into the base.

  3. Divide the mixture among ramekins, leaving a little room because the mini cheesecakes will rise slightly during baking.

  4. Bake the mini cheesecakes in ramekins at 160–170°C for 25–35 minutes, until the edges are set and the center is slightly springy.

  5. Cool the mini cheesecakes for 20–30 minutes in the oven with the door ajar so they do not sink sharply after being removed.
