Ingredients
Servings: 8
500 g finely ground twaróg (Polish farmer’s cheese)
2 eggs
100 g sugar
80 ml cream
40 g gluten-free vanilla pudding powder (cook-and-serve)
Steps
Mix the twaróg with the sugar, eggs, and cream until smooth but not aerated.
Add the vanilla pudding powder and briefly fold it into the base.
Divide the mixture among ramekins, leaving a little room because the mini cheesecakes will rise slightly during baking.
Bake the mini cheesecakes in ramekins at 160–170°C for 25–35 minutes, until the edges are set and the center is slightly springy.
Cool the mini cheesecakes for 20–30 minutes in the oven with the door ajar so they do not sink sharply after being removed.
