100 g almonds
100 g dried apricots
1 teaspoon honey
1 tablespoon shredded coconut
a pinch of ground cinnamon
Steps
If the dried apricots are firm, cover them with warm water for a few minutes, then drain and pat them dry so they do not loosen the almond mixture.
Process the almonds, dried apricots, honey, shredded coconut, and cinnamon into a thick, sticky mixture.
Taste the mixture and, if needed, add 1 teaspoon of water or more ground almonds to adjust the consistency.
Shape into small balls, gently pressing the mixture between your palms; the apricots and honey should bind the almonds and shredded coconut together.
Refrigerate the balls for 20–30 minutes so the apricot-almond mixture firms up and the cinnamon aroma develops more evenly.
