No-bake blueberry sernik is a creamy dessert on a crust made with plain crisp cookies and butter. Finely ground twaróg and whipping cream create a delicate base, while blueberries add juiciness, color, and a gentle fruity contrast. Agar-agar stabilizes the filling, so combine it thoroughly with a portion of the filling before adding it to the rest. After several hours of chilling, the sernik becomes firm yet remains soft and easy to slice.
Ingredients

500 g finely ground twaróg (Polish farmer’s cheese)
200 ml whipping cream (30% fat)
200 g blueberries
80 g plain crisp cookies
60 g butter
60 g powdered sugar
100 ml cold water
5 g pure agar-agar powder
Steps
Combine the plain crisp cookies and melted butter into moist crumbs, then press them into the pan.
The twaróg and blueberries should be at room temperature. Mix the twaróg with the powdered sugar until smooth, dry the blueberries thoroughly, and whip the well-chilled cream separately to soft peaks.
Whisk the agar-agar thoroughly into 100 ml cold water. Heat, whisking constantly, until the mixture reaches a full boil, then simmer gently for 1 minute.
Whisk 3–4 tablespoons of the cheese mixture into the hot agar solution one at a time. Immediately pour the tempered mixture in a thin stream into the remaining cheese mixture while blending with an immersion blender, keeping the blade guard submerged, just until smooth. Gently fold in the whipped cream, then fold in the blueberries.
Spread the filling over the cookie crust and chill for at least 3 hours, until the sernik is firm enough to slice.
