About this recipe

No-bake raspberry sernik is a dessert with a creamy twaróg filling, whipping cream, and a pronounced raspberry accent. The raspberries add freshness and gentle tartness that balances the sweetness of the powdered sugar. The crust made with plain crisp cookies and butter is simple but provides a pleasant contrast to the delicate filling. Chill the sernik for several hours so the agar-agar can set the cream and the raspberries can meld with the twaróg base.

Ingredients

Servings: 10

  • 500 g finely ground twaróg (Polish farmer’s cheese)

  • 200 ml whipping cream (30% fat)

  • 200 g raspberries

  • 80 g plain crisp cookies

  • 60 g butter

  • 60 g powdered sugar

  • 100 ml cold water

  • 5 g pure agar-agar powder

Steps

  1. Mix the crushed plain crisp cookies with the butter, then level the crust with the bottom of a glass or a spoon.

  2. The twaróg and raspberries should be at room temperature. Mix the twaróg with the powdered sugar until smooth, lightly mash the raspberries, and whip the well-chilled cream separately to soft peaks.

  3. Whisk the agar-agar thoroughly into 100 ml cold water. Heat, whisking constantly, until the mixture reaches a full boil, then simmer gently for 1 minute.

  4. Whisk 3–4 tablespoons of the cheese mixture into the hot agar solution one at a time. Immediately pour the tempered mixture in a thin stream into the remaining cheese mixture while blending with an immersion blender, keeping the blade guard submerged, just until smooth. Gently fold in the whipped cream, then fold in the raspberries.

  5. Spread the filling over the crust, level the top, and chill for at least 3 hours, until set.
