No-bake white chocolate sernik is a creamy Polish cheesecake made with finely ground twaróg and whipping cream on a plain crisp cookie crust. Refrigerate the sernik for several hours, until firmly set and easy to slice.
Ingredients

500 g finely ground twaróg (Polish farmer’s cheese)
200 ml whipping cream (30% fat)
60 g white chocolate
80 g plain crisp cookies
60 g butter
60 g powdered sugar
100 ml cold water
5 g pure agar-agar powder
Steps
Crush the plain crisp cookies fairly finely, mix them with the butter, and shape an even crust.
The twaróg should be at room temperature. Melt the white chocolate and let it cool slightly while keeping it fluid, then mix it with the twaróg and powdered sugar. Whip the well-chilled cream separately to soft peaks.
Whisk the agar-agar thoroughly into 100 ml cold water. Heat, whisking constantly, until the mixture reaches a full boil, then simmer gently for 1 minute.
Whisk 3–4 tablespoons of the cheese mixture into the hot agar solution one at a time. Immediately pour the tempered mixture in a thin stream into the remaining cheese mixture while blending with an immersion blender, keeping the blade guard submerged, just until smooth. Gently fold in the whipped cream.
Spread the filling over the crust, smooth the top, and chill for at least 3 hours, until it feels firm to the touch.
