No-bake lemon sernik is a creamy Polish cheesecake made with finely ground twaróg and whipping cream on a plain crisp cookie crust. Lemon zest gives the filling a fresh aroma and balances the powdered sugar, making the dessert taste lighter. Agar-agar sets the filling as it chills, so incorporate it quickly and thoroughly into the twaróg mixture. Serve after several hours in the refrigerator, once the buttery cookie crust and lemon filling are fully set.
Ingredients

500 g finely ground twaróg (Polish farmer’s cheese)
200 ml whipping cream (30% fat)
zest of 1 lemon
80 g plain crisp cookies
60 g butter
60 g powdered sugar
100 ml cold water
5 g pure agar-agar powder
Steps
Mix the plain crisp cookie crumbs with the melted butter, then press them firmly and evenly into the pan.
The twaróg should be at room temperature. Mix it with the powdered sugar and finely grated lemon zest until smooth, and whip the well-chilled cream separately to soft peaks.
Whisk the agar-agar thoroughly into 100 ml cold water. Heat, whisking constantly, until the mixture reaches a full boil, then simmer gently for 1 minute.
Whisk 3–4 tablespoons of the cheese mixture into the hot agar solution one at a time. Immediately pour the tempered mixture in a thin stream into the remaining cheese mixture while blending with an immersion blender, keeping the blade guard submerged, just until smooth. Gently fold in the whipped cream.
Pour the filling over the crust and refrigerate for several hours, preferably until fully set.
