180 g rolled oats
100 g all-purpose flour
80 g firm plant-based margarine in a block (70–80% fat)
50 g brown sugar
60 ml unsweetened oat milk
50 g raisins
1 egg
1/4 teaspoon salt
Steps
Preheat a conventional oven (no fan) to 175°C and line a baking sheet with parchment paper. Melt the firm plant-based margarine and let it cool slightly, then mix it with the egg, brown sugar, and oat milk.
Add the oats, flour, salt, and raisins. Mix until no dry flour remains; the dough should be thick and moist.
Let the dough rest for 10 minutes. Divide it into 12 equal portions, arrange them on the baking sheet, and flatten to about 1 cm thick.
Bake on the middle rack for 12–15 minutes, until the edges are lightly golden and the centers remain soft.
Leave the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
