Cucumber-mint lemonade is a light drink made with lemons, cucumber, fresh mint, honey, and water. The cucumber adds a cool, delicate note, the lemons provide acidity, and the mint makes the drink especially refreshing. Slice the cucumber thinly so it releases its flavor quickly without overpowering the drink. Dissolve the honey in some of the water before adding the lemon juice so the lemonade is evenly flavored.

Ingredients

Servings: 4

  • 1/2 cucumber

  • 2 lemons

  • 1 liter water

  • 2 tablespoons honey

  • a few mint leaves

Steps

  1. Slice the cucumber very thinly and juice the lemons. Gently bruise the mint between your palms so its flavor comes through in the drink.

  2. In a pitcher, dissolve the honey in some of the water, then add the lemon juice and cucumber slices. Stir to help the cucumber begin releasing its fresh flavor.

  3. Pour in the remaining water, add the mint, and refrigerate until the lemonade is well chilled. Do not stir for too long, or the cucumber may make the drink taste watery.

  4. Serve after a few minutes, once the mint and cucumber have lightly infused the lemon base. The lemonade is best served very cold.
