Masala chai is an aromatic Indian tea simmered with milk, cardamom, ginger, and cinnamon. It is prepared in one saucepan, allowing the black tea to take on the spices’ intense flavor while the milk gives it a mild, creamy consistency. Serve it hot and strained into cups, preferably for breakfast or on a chilly afternoon. Adjust the amount of sugar to taste.

  • 300 ml water

  • 250 ml milk

  • 2 teaspoons loose-leaf black tea or 2 bags black tea

  • 4 green cardamom pods, lightly crushed

  • 2 cm fresh ginger, thinly sliced

  • 1 cinnamon stick

  • 2 teaspoons sugar

Steps

  1. Pour the water into a small saucepan and add the cardamom, ginger, and cinnamon stick. Bring to a boil over medium heat, then simmer for about 5 minutes, until the infusion has a distinctly spicy aroma.

  2. Add the loose-leaf black tea or tea bags to the saucepan. Simmer over low heat for 3 minutes, until the liquid takes on a deep tea color.

  3. Add the milk and sugar, then heat over medium heat for about 5 minutes. Do not bring the drink to a vigorous boil; the chai should be hot, lightly frothy, and creamy.

  4. Strain the masala chai through a fine-mesh sieve into two cups, removing the tea and spices. Serve immediately while the drink is hot and intensely aromatic.
