Stir in the honey after steeping to soften the lemon and bring the flavors together.

Ingredients

Servings: 4

  • 500 ml water

  • a few mint leaves

  • 1/2 lemon

  • 1 teaspoon honey

  • a pinch of ginger

Steps

  1. Rinse the mint leaves and gently bruise them between your hands. Slice the lemon or squeeze out some of its juice, and measure a pinch of ginger.

  2. Pour hot water over the mint and ginger, cover, and steep for 4–5 minutes. Do not leave the mint in very hot water too long or it may become bitter.

  3. Add the lemon after the brief steep and stir. If using slices with the peel, remove them after a few minutes once they have released their aroma.

  4. Stir in the honey only after the infusion has cooled slightly. Serve immediately, or strain if you prefer a drink without mint leaves.
