2 zucchini
2 eggs
3 tablespoons all-purpose flour
150 g yogurt
1 garlic clove
2 tablespoons canola oil (about 24 g), for frying
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Grate the zucchini on the large holes of a box grater and thoroughly squeeze out the excess liquid.
Mix the squeezed zucchini with the eggs and flour until it forms a mixture that holds its shape on a spoon. Add 1/2 teaspoon salt and 1/4 teaspoon black pepper, then mix thoroughly.
Heat some of the oil in a nonstick skillet. Fry the fritters in batches for 2–3 minutes on each side, adding the remaining oil before each subsequent batch. The fritters should be browned and the zucchini tender.
Stir the garlic into the yogurt to make a quick sauce, and serve it alongside the cooked fritters.
Serve the fritters immediately with the garlic yogurt sauce, before the crisp edges soften from moisture.
