About this recipe

A couscous salad with sun-dried tomatoes is a light snack with cucumber, arugula, and olive oil, well suited to a lunchbox. The couscous quickly absorbs water and creates a fine, fluffy base that mixes well with the additions. Sun-dried tomatoes add an intense, slightly sweet-tart flavor, while cucumber brings freshness and crunch. Arugula balances everything with a gentle peppery bite, and olive oil brings the ingredients together without a heavy dressing.

Ingredients

Servings: 2

  • 100 g couscous

  • 3 sun-dried tomatoes

  • 1/2 cucumber

  • a handful of arugula

  • 1 tablespoon olive oil

Steps

  1. Prepare the couscous according to the package instructions and cool completely.

  2. Cut the sun-dried tomatoes into strips, dice the cucumber, and roughly chop the arugula or leave it in small leaves.

  3. Combine the couscous with the vegetables and arugula, then add the olive oil at the end.

  4. Toss the salad just before serving, or chill it in a container for 15–20 minutes beforehand.
