Thick onion slices are dipped in a light egg-and-milk batter, then deep-fried until browned outside and tender inside. Frying in batches and draining the finished rings on paper gives the batter a notably crisp texture.

Onion Rings

  • 3 large onions, peeled

  • 150 g all-purpose flour

  • 30 g potato starch

  • 1 teaspoon baking powder

  • 1 egg

  • 180 ml milk

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper

  • 700 ml vegetable oil for deep-frying

Steps

  1. Slice the onions into rounds about 1 cm thick and gently separate them into individual rings. Select the larger rings for frying and save the smaller ones for another dish.

  2. In a large bowl, combine the flour, potato starch, baking powder, salt, and pepper. Add the egg and milk, then whisk for about 1 minute, until a smooth, fairly thick batter forms with the consistency of sour cream.

  3. Pour the oil into a wide, heavy pot and heat over medium heat to about 175°C. The oil should sizzle around a small amount of batter but should not smoke.

  4. Pat the onion rings dry with a paper towel, dip them one at a time into the batter, and let the excess drip back into the bowl. The entire surface of each onion ring should be evenly coated.

  5. Fry the rings in batches for about 3–4 minutes, turning them halfway through, until the batter is golden and distinctly crisp. Do not overcrowd the pot, so the oil temperature does not drop too much.

  6. Remove the finished rings with a slotted spoon and arrange them on several layers of paper towel. Serve immediately, while the batter is at its crispiest.
