About this recipe

Lunchbox pasta salad is a simple snack made with pasta, cucumber, tomato, cheese, and a yogurt dressing. The pasta provides a base that holds up well in a container, while the vegetables add freshness and juiciness. The cheese deepens the flavor and makes the salad more substantial, while the yogurt binds the ingredients more lightly than a heavy mayonnaise dressing. Cook the pasta al dente and let it cool before mixing so the salad retains a good texture. This practical lunchbox salad works well for lunch or as a quick snack made with simple ingredients.

Ingredients

Servings: 1

  • 120 g pasta

  • 1/2 cucumber

  • 1 tomato

  • 60 g cheese

  • 100 g plain yogurt

  • 1 teaspoon mustard

  • 2 teaspoons lemon juice

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

Steps

  1. Cook the pasta al dente for the time indicated on the package, drain, briefly rinse with cool water, and let cool completely.

  2. Dice the cucumber, tomato, and cheese. If the tomato is very juicy, remove the watery seed pockets.

  3. Thoroughly mix the yogurt with the mustard, lemon juice, salt, and pepper. Combine the dressing with the pasta, cheese, and vegetables until all the ingredients are evenly coated.

  4. Transfer the salad to a lunchbox and chill for 15–20 minutes before serving.
