About this recipe

Lunchbox rice and tuna salad is a filling snack with cucumber, tomato, and a yogurt dressing. The rice creates a mild base, the tuna adds bold flavor and protein, and the vegetables bring freshness. The yogurt brings the ingredients together without making a heavy dressing and pairs well with cooled rice. Drain the tuna thoroughly so the salad does not become watery after being transferred to a container. This recipe works well for a lunchbox, a quick dinner, or a simple rice salad that can be prepared ahead.

Ingredients

Servings: 2

  • 100 g rice

  • 1/2 can tuna

  • 1/2 cucumber

  • 1 tomato

  • 100 g plain yogurt

  • 1 teaspoon mustard

  • 2 teaspoons lemon juice

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

Steps

  1. Cook the rice according to the package directions, drain if needed, spread it in a thin layer, and cool completely.

  2. Drain the tuna thoroughly. Dice the cucumber and tomato; remove the watery seed pockets from a very juicy tomato.

  3. Mix the yogurt with the mustard, lemon juice, salt, and pepper. Combine the dressing with the rice, tuna, and vegetables until the ingredients are evenly coated.

  4. Transfer the salad to a container and chill for 30 minutes before serving.
