Ingredients

Servings: 4

  • 160 g corn

  • 2 eggs

  • 3 tablespoons all-purpose flour

  • 2 tablespoons yogurt

  • 1 tablespoon chives

  • 2 teaspoons canola oil (about 8 g), for frying

Steps

  1. Drain the corn and lightly mash some of the kernels with a fork.

  2. Mix it with the eggs, flour, yogurt, and chives.

  3. Heat a total of 8 g of oil in a nonstick skillet, dividing it among all batches. Fry small fritters for 2–3 minutes per side in a well-heated skillet, until lightly golden.

  4. Serve warm or after cooling.
