About this recipe
Mini corn fritters are a quick snack made with corn, eggs, flour, yogurt, and chives. It helps to lightly mash some of the kernels so the batter comes together better, while leaving the rest whole for a sweet, juicy accent. Yogurt adds tenderness, flour and eggs provide structure, and chives balance the sweetness of the corn. The small fritters cook quickly and are easy to flip in the skillet. Serve these corn fritters warm or after cooling.
Ingredients
Servings: 4
160 g corn
2 eggs
3 tablespoons all-purpose flour

2 teaspoons canola oil (about 8 g), for frying
Steps
Drain the corn and lightly mash some of the kernels with a fork.
