About this recipe
Broccoli fritters with yogurt dip are a simple snack made with broccoli, eggs, and flour, served with cool garlic yogurt. Briefly parboiled or steamed broccoli combines easily with the egg mixture, so the fritters hold together while still tasting distinctly of vegetables. Flour helps them keep their shape during frying, while garlic yogurt adds a fresh, gently sharp contrast. It is best to keep the fritters small so they brown quickly and are easy to flip. These fritters work well as a warm broccoli snack or a simple addition to a light meal.
Ingredients
Servings: 2
1 small head of broccoli
2 eggs
3 tablespoons all-purpose flour
150 g yogurt
1 garlic clove
2 teaspoons canola oil (about 8 g), for frying
Steps
Cut the broccoli into small florets, parboil or steam them for 3–4 minutes, then finely chop them.
Mix the broccoli with the eggs and flour into a thick batter.
Heat a total of 8 g of oil in a nonstick skillet, dividing it among all batches. Fry small fritters for 2–3 minutes per side, until browned on both sides.
Stir the crushed garlic into the yogurt and serve it as a dip.
