Thoroughly squeezed zucchini, eggs, flour, and breadcrumbs make a mixture that holds its shape well during frying. Ingredients

  • 2 zucchini

  • 2 eggs

  • 3 tablespoons all-purpose flour

  • 150 g yogurt

  • 1 garlic clove

  • a pinch of salt

  • pepper

  • 2 tablespoons breadcrumbs

  • 2 teaspoons canola oil (about 8 g), for frying

Steps

  1. Grate the zucchini and squeeze out the excess water thoroughly.

  2. Mix it with the eggs, flour, breadcrumbs, pepper, and salt until you have a thick batter.

  3. Heat a total of 8 g of oil in a nonstick skillet, dividing it among all batches. Spoon small portions onto the well-heated skillet and fry for 2–3 minutes per side, until the fritters are browned.

  4. Stir the crushed garlic into the yogurt and serve it as a dip.
