About this recipe

Potato and zucchini fritters are a vegetable snack made with egg, flour, and yogurt that works well warm or after cooling. Potatoes give the fritters a firmer base, while zucchini adds moisture and a lighter flavor. It helps to squeeze the grated vegetables thoroughly so the mixture is not too thin and browns better in the skillet. Cool yogurt makes a simple accompaniment to the hot fritters.

Ingredients

Servings: 3

  • 300 g potatoes

  • 1 zucchini

  • 1 egg

  • 3 tablespoons all-purpose flour

  • 150 g yogurt

  • 2 teaspoons canola oil (about 8 g), for frying

Steps

  1. Grate the potatoes and zucchini, then squeeze out the excess liquid well.

  2. Mix the vegetables with the egg and flour into a cohesive mixture.

  3. Heat a total of 8 g of oil in a nonstick skillet, dividing it among all batches. Fry the fritters for 2–3 minutes per side, until browned and crisp around the edges.

  4. Serve with yogurt.
